Tasty Taco Fundraising Goes North with Moonen’s True North Salmon Taco

LAS VEGAS – April 21, 2015 – A perfect springtime taco is coming to Mercadito at Red Rock Resort as part of Mercadito Hospitality’s national Tacos for Strength campaign.  This May, Mercadito will feature a refreshing and light salmon taco by Chef Rick Moonen of rm Seafood and Rx Boiler Room in Las Vegas.  Perfect for the increasing temperature, Moonen’s creation is available for dinner for (four per order) for $16.50 or for lunch (three per order) for $13.50.  A percentage of the proceeds will benefit Share Our Strength.

For May, Moonen introduces his signature True North Salmon Taco featuring a True North Salmon filet, brown sugar, lapsang souchong tea, cucumber cabbage slaw with horseradish crema and Sriracha.  “This dish is like a picnic.  The salmon has the smokiness of a hot dog from the tea, the horseradish gives you the bite of mustard, and the slaw provides the sharpness of a pickle relish,” said Moonen.  “That said, it is one elegant and delicious dish.”

(Las Vegas) – Chef Rick Moonen, world renowned chef known for his sustainable fishing advocacy, collaborated with CraftHaus Brewery on a specialty beer, April 19th, 2015.  Chef Moonen wanted an exclusive beer from CraftHaus Brewery to highlight his seafood driven menus at both his Las Vegas strip restaurants, RX Boiler Room and RM Seafood.  The collaboration between Chef Moonen and CraftHaus Brewery was driven by a mutual passion for sustainability and creative culinary exploration.

Head brewer, Steve Brockman suggested a Belgian Wit style of beer, which is a perfect compliment to Chef Moonen’s seafood dishes. In keeping with the spirit of seasonality and creativity, Chef Moonen brought locally sourced flowers, herbs and botanicals to infuse and elevate the beer. Playful collaboration between brewer and chef ultimately led to a spring inspired, effervescent beer.

“This beer is a celebration of collaboration. We are honored to have the opportunity to work with culinary icon, Chef Moonen and his staff. His talent and willingness to share it with us is an inspiration,” Dave Forrest, Co-Owner, CraftHaus Brewery.

Fort York will be transformed into a foodie wonderland for four days of summer eating, drinking and entertainment. Operating much like a restaurant with lunch and dinner services, Taste of Toronto is comprised of six half-day sessions that last between 4- 5 hours which gives our guests the time to enjoy their pick of restaurant dishes, browse the artisan stalls and enjoy some of the many attractions including the Taste Theater, Metro Master Classes, the Tasting Room, a VIP Lounge and a Music Stage.” Chef Rick Moonen will be doing a live demo at the Taste Theater during Taste of Toronoto this year.
